Soliciting All Carrot Recipes

All right. Sitting in our fridge right now are four bags of carrots. They just pile up with every box of Urban Organic we get. I need to make something that will use most of them. Do any of you have recipes that call for a lot of carrots? princessinabox, you mentioned a yummy carrot ginger soup the other day. Do you still have that recipe?

I believe I have a carrot souffle recipe that is pretty good.

Carrot cake? Carrot cake cheesecake?

I also like 'em roasted and mashed with butter and maple syrup or honey, but I don't think that will use up four bags.

3 cups of grated carrots? Maybe it'll make a dent. I confess, I'm posting thing just because the icing sounds so good. :)
