Roasted Pumpkin Seeds

My good heavens, I love homemade roasted pumpkin seeds. I can't eat enough of them. Tonight, we finally used the cooking pumpkin we bought upstate when we went apple picking. I made a delicious and subtle pumpkin soup, and then I roasted the seeds with salt and a pinch of cayenne pepper. Yeehaw, they are tasty! And CL made homemade croutons with olive oil, herbs de Provence, parmesan cheese, and pepper.

And so I float off to bed, with a full and happy tummy.

My family roasting and eating pumpkin seeds is one of my favorite and most vivid childhood memories. I always hated that time of year when I was young, but the knoweldge that, come late October, dad would be pulling out cookie sheet after cookie sheet of roasted pumpkin seeds was a bright spot in an otherwise gloomy month.
